Paddy and Kay Cooney have been making their distinctive, mature cheddar cheese since 2013 using raw milk from their own herd of Fresian/Jersey cows that graze the fields of Lough Derg. The Cooney family are farming in the area for generations. The farm is based between the picturesque Garrykennedy and Youghal Quay, Nenagh, Co. Tipperary.

Derg Farmhouse Cheese is a mature cheddar cheese made with raw milk and natural animal rennet. Handmade by traditional methods, the curds are milled and salted by hand, pressed and bound in muslin cheese cloth and matured in ripening room for 8-12 months.
